About one ingredient this week: Millet

Millet is one of the oldest human foods and believed to be the first domesticated cereal grain. It is rich in minerals like calcium, copper, iron, magnesium, phosphorus, potassium, and selenium as well as essential vitamins like folate, pantothenic acid, niacin, riboflavin, and Vitamins B6, C, E, and K. It is an alkalizing grain, rich in fiber and antioxidants, good quality protein source, and a healthy gluten-free alternative.
It can boost human health in various ways:

  • helps control blood sugar level and improve digestion
  • reduces inflammation
  • supports healthy gut flora and acts as a prebiotic
  • may help lower cholesterol level
  • supports the functioning of muscles and the nervous system

Millet contains tryptophan, the essential amino acid that helps produce serotonin. Serotonin has a significant effect on our mood, sleep, and appetite, and low serotonin levels can lead to depression and sleep disturbances. So if you’re in a bad mood, it’s good advice to cook and consume a bowl of millet : )
